Working Days: 5 Days/Week
Working Hours: Monday to Friday, 4:30 AM – 2:00 PM
Salary: $3,500 – $4,000/Month

JOB DESCRIPTION

We are looking for an experienced and responsible Junior Sous Chef to join our central kitchen team at Foodfab @ Mandai. The successful candidate will support the Head Chef and Unit Manager in managing daily kitchen operations, food production, kitchen staff and overall back-of-house activities.

The Junior Sous Chef will be responsible for ensuring that all food is prepared and served according to the planned menu while maintaining consistent food quality, hygiene, sanitation and safety standards.

The candidate should have experience in Asian cuisine and cold kitchen operations. Candidates must also be comfortable handling food ordering and supporting inventory-related duties.

KEY RESPONSIBILITIES

• Manage and support the overall daily food production and back-of-house operations.

• Cook and prepare assigned dishes according to the daily menu, special menus and promotional dishes.

• Prepare Asian cuisine and cold kitchen items according to required recipes and standards.

• Assist with daily and banquet menu planning.

• Work closely with the Head Chef and Unit Manager to plan and execute monthly rotating menus.

• Assist in developing and preparing special food promotions when required.

• Ensure that all dishes are prepared consistently and according to company quality standards.

• Monitor food preparation, cooking and presentation to maintain good food quality.

• Supervise and guide kitchen staff during daily operations.

• Ensure all kitchen crew members understand their duties and complete assigned tasks properly.

• Assist with manpower planning and allocation according to daily operational requirements.

• Maintain effective communication with kitchen staff and management.

• Monitor kitchen workflow and ensure smooth food production during busy periods.

• Handle food ordering and ensure sufficient ingredients are available for daily production.

• Monitor stock levels and coordinate with the relevant team regarding food supplies.

• Assist in maintaining proper inventory control and reduce unnecessary food wastage.

• Ensure all food is processed, stored and handled according to proper hygiene and sanitation standards.

• Ensure compliance with company requirements and applicable government food hygiene regulations.

• Monitor cleanliness and hygiene standards throughout the kitchen and food preparation areas.

• Ensure proper food sampling procedures are followed.

• Maintain daily cooking core temperature records.

• Record and monitor refrigerator temperatures regularly.

• Ensure food is stored at the appropriate temperature and handled safely.

• Monitor kitchen equipment and ensure all equipment is operated safely.

• Report any faulty, damaged or unsafe kitchen equipment to the management immediately.

• Ensure cleaning equipment is used safely and correctly.

• Maintain the required in-house and corporate service standards.

• Handle daily customer feedback professionally and communicate relevant issues to the management team.

• Work closely with the Unit Manager and Head Chef to improve food quality and service standards.

• Attend weekly service meetings and contribute ideas to improve kitchen operations and service levels.

• Support the team in maintaining an efficient, organized and professional kitchen environment.

• Perform any other kitchen-related duties as assigned by the Head Chef or Unit Manager.

REQUIREMENTS

• Previous experience as a Chef, Junior Sous Chef or similar kitchen leadership position.

• Strong experience in Asian cuisine.

• Experience in cold kitchen operations is required.

• Able to prepare and cook a variety of dishes according to menu requirements.

• Able to handle food ordering and basic inventory management.

• Good understanding of food hygiene and kitchen safety procedures.

• Able to supervise and guide kitchen staff effectively.

• Good communication and teamwork skills.

• Able to work independently as well as part of a kitchen team.

• Able to work efficiently in a fast-paced central kitchen environment.

• Able to work early morning shifts starting at 4:30 AM.

• Responsible, organized and able to manage daily kitchen responsibilities.
